Play-All-Day Breakfast Hash: Your New Winter Breakfast Staple

I know breakfast can be tough.
There never seems to be enough time in the morning to prepare the kind of food you want to be eating to fuel your body for a packed schedule of work or play (or both!). Even when you do have time to slap something in a pan, it's hard to find the appetite for that first meal of the day.

I get it. I spent years skipping breakfast altogether — and feeling sluggish, unmotivated, and ravenous by lunchtime.
Even though I didn't feel hungry, the absence of morning fuel was a huge part of my metabolic dysfunction.
I didn’t have energy or focus, relied heavily on caffeine, and by my third cup of coffee, I had the jitters — already planning my next.
It was a recipe for anxiety, exhaustion, and grouchiness.

If so, today I’m sharing my favorite high-protein breakfast hash — the one that gets me out of my slump, kickstarts my metabolism, and gives me something drool-worthy to look forward to every morning (no matter how packed the day ahead).


Why This Hash Works

This is the first thing I reach for when I have a fun winter day ahead.
After yesterday’s blizzard, I was ready to break out my classic skis and spend the day exploring our trails — and trust me, the best way to enjoy a full snowy day is to start with a nourishing breakfast.

Even better?
This hash is endlessly flexible.
Sub out almost any part depending on what you have on hand — the only non-negotiable is a protein rich in healthy fats.

Jowl bacon from our Breakfast Box is my go-to here.
(Though ham steaks with a dollop of Late Bloomer Ranch lard work beautifully, too.)
I love jowl bacon because it’s loaded with clean, delicious fat without compromising on that classic bacon flavor you love.


Play-All-Day Breakfast Hash Recipe

Serves 4

Ingredients:

  • 2 large sweet potatoes (or root vegetable of choice), chopped into bite-sized cubes

  • 1 small yellow onion and 1 leek (or your favorite allium combination)

  • 1 can black or red beans

  • ½ bunch kale, chopped and stems removed

  • Salt and pepper

  • Red pepper flakes

  • Cilantro, parsley, or favorite aromatic herb

  • ½ pound Late Bloomer jowl bacon (or any Breakfast Box cuts with a bit of extra LBR leaf lard)

  • 4 Late Bloomer Ranch eggs (over-easy, or however you like them)


Preparation:

  1. Parboil the sweet potatoes until just fork-tender. Drain and set aside.

  2. Fry the jowl bacon in a cast-iron skillet (or roast in the oven), then chop into small bits.

  3. Remove the meat with a slotted spoon, leaving the rendered fat in the pan. Add a little extra fat if needed.

  4. Add the onion and leek to the pan and cook until translucent, stirring regularly.

  5. Stir in the chopped kale and let it wilt.

  6. Fold in the sweet potatoes and beans, stirring to combine. Let everything cook until just-crispy.

  7. Season with salt, pepper, and red pepper flakes to your desired heat level. (Remember: our salt-cured jowl bacon already brings a salty-sweet punch.)

  8. Stir the crispy jowl bacon bits back into the skillet. Transfer everything to a serving plate.

  9. Fry your eggs to your preferred gooey-ness.

  10. Serve the hash topped with a fried egg and garnish with fresh herbs. (Extra points for a spoonful of kimchi or probiotic sour cream!)
