The Leicester are a historical, stoic breed, traditionally bred for their incredible wool and fleeces. Lesser appreciated, but equally remarkable, is their soft, tender, and delicious meat. Because the sheep are a slow-growing breed, they accumulate fat slowly which creates sumptuous intramuscular marbling. Instead of the mutton-y, lamb-y flavors you may be used to, the Leicesters have a light, sweet mouthfeel that doesn't leave an aftertaste. It's really something.
